We Cook! Sweet Potato Latkes for Hanukkah (Dec. 14-22) – Anthony Salemme
Happy Hanukkah!
1 ½ pound sweet potatoes, peeled and shredded
1 medium yellow onion, chopped fine
3 tablespoons chives, chopped fine
3 eggs
½ cup flour
1 teaspoon baking powder
1 teaspoon salt – 2 teaspoons black pepper
1 cup vegetable oil for frying
(Sour Cream – Apples – applesauce)
Mix all the ingredients in a bowl until well combined. Fry 1/3 cup portions of potato mixture in batches so that you have 16 equal size pancakes. Flatten the pancakes when you place them in the oil. Keep warm in a 300F oven until ready to serve.
Assembly
Place 2 pancakes on each plate, top each with applesauce, stewed apples or sour cream with chives
