Atlantic Cod with Smoked Salmon Stuffing – Anthony Salemme

This is a Zhuzhed up Traditional baked cod with a bit of smoked salmon.
Serves 2.
12 ounces Cod loin
3 ounces smoked Salmon, diced fine
1/3 cup butter
¼ cup white wine
1 stalk celery, diced fine
2 shallots, diced fine
1 clove garlic, minced
1 lemon, zested and juice reserved
1 cup panko bread crumbs
2 teaspoons fresh dill, chopped
Pre heat oven to 425F.
In a skillet on medium heat, melt butter until it bubbles and is almost starting to brown.
Next add shallots, celery, garlic and sautè until softened, about 5-7 minutes.
Add the smoked salmon, wine, lemon juice and zest, and then toss in the panko bread crumbs.
Let cool for 15 minutes before putting on top of the Cod.
Place the Cod in an oiled shallow baking dish. Top with stuffing and bake for 15 – 17 minutes.
Serve with additional lemon and vegetable of your choice.
