Get Your Holiday(s) On! Hanukkah Latkes from Tamarisk
This year Hanukkah starts at sundown on Sunday, December 22nd, and runs until Sunday, December 30th. There are many traditions of Hanukkah – the most popular is the lighting of the Hanukkah Menorah, adding one candle each night, representing the Jewish festival commemorating the rededication of the Second Temple in Jerusalem at the time of the Maccabean Revolt against the Seleucid Empire. It is also known as the Festival of Lights. According to the Talmud, the Temple was purified and the wicks of the menorah miraculously burned for eight days, even though there was only enough sacred oil for one day’s lighting.
In the area of traditional foods, latkes – sometimes referred to as potato pancakes – are served. Made in a variety of ways from fried to baked with sides of applesauce to sour cream, these foods keep the tradition of eating foods cooked with olive oil to commemorate the small flask of oil that lasted eight days.

Cooking your own latkes can take some skill. Whether you make them “from scratch” with shredded potatoes or use a mix, there are still factors such as having the oil hot enough, etc. So, here’s the best idea.
